No one knows. This is a hot question on .org, which has been around a lot longer than .com.
IMO, a good number is enough to affect the battle (hopefully) while not being a large enough fraction of your force that they're likely to die too early to be anything but a waste. I rarely send cooks/doctors out to pillage with. They only tend to go out when I'm sending a hundred phalanxes or so backed by my heavies. And then, yes, I send 4 or 5 of them. I've lost only one so far, in a total of 3 mass (200+ unit) battles.
